The Numex Joe Parker pepper is named after its developer, Joe E. Parker, a 1950 graduate of New Mexico State University's College of Agricultural. This variety is an excellent, heavy yielding producer 6-7 inch long meaty pods with a medium heat level and rich, full flavor. Usually harvested after turning red.
They're milder than a jalapeno and a tad spicier than the standard Anaheim but ripen much earlier than the other varieties. Often used in Mexican dishes like salsa, soups, and stews and as part of holy trinity in Cajun food. Stuff with cheese, roast and fry them for authentic chile rellenos.
Peppers freeze well whole.
Interplant with basil, marigolds, calendula, onions, garlic, chives, thyme, rosemary, and oregano to improve flavor, increase harvest, repel harmful pests, and attract beneficial insects like bees and ladybugs.
Starter will be in a 4" reusable nursery pot.
